Tomato Basil Soup
Tod Ohnstad brought this soup down to our house on 69th Street one summer evening, made with the bounty of tomatoes from his garden.
Ingredients
- 1 medium onion
- 2-3 cloves garlic
- 1 t olive oil
- 1 lb chopped tomatoes with skin on
- 1 14 oz can tomato sauce
- 1 14 oz can chicken broth
- 1/4 c cream or half and half
- 2 t chopped, fresh basil
- parmesan cheese
Instructions
- Chop onion and garlic and cook in olive oil until tender
- Add fresh tomatoes to above mixture and cook on medium for 10 minutes
- Add rest of the ingredients and simmer for 30 minutes
- After 30 minutes, put in blender and blend until smooth
- Great to freeze. Can double.
