Shrimp Italiano
Ted's Favorite
Ingredients
- 2 lbs shrimp, cooked
- 2 T olive oil
- 2 T butter
- 2 c bell pepper, diced
- 1 c onion, chopped
- 5 cloves garlic, minced
- 2 c chopped tomatoes, drained
- 1 & 1/2 c tomato sauce
- 3/4 c sliced black olives
Instructions
- Heat oil and butter. Sautee bell pepper, onion and garlic until tender. Add shrimp, tomatoes, tomato sauce, black olives and heat thoroughly. Serve over pasta or rice.
- Stir in shrimp and simmer 5 minutes. Stir in scallions, parsley and lemon juice; simmer 1 minute. To serve, spoon 1/2 c of rice into each of 4 bowls and top each with about 2 cups of shrimp mixture.
