Hellmann's Potato Salad
A summer staple
Ingredients
- 2 lbs. potatoes (5 or 6 medium)
- 2 T vinegar
- 1 t sugar
- 1 c Hellmann's Mayonnaise
- 1 c thinly sliced celery
- 1/2 c chopped onion
- 2 hard cooked eggs, chopped (optional)
- 1/4 t ground black pepper
- 1 1/2 t salt
Instructions
- Cover potatoes with water in a 4-1uart sauce pot; bring to a boil over medium-high heat. Reduce heat to low and simmer 10 minutes or until potatoes are fork-tender. Drain and cool slightly. Mix mayo, vinegar, sugar, salt, and pepper.
- Gently toss potatoes, mayonnaise mixture, celery, onion, and eggs. Serve chilled or at room temperature.
NotesUse half a recipe for the 2 lbs of potatoes. A 5 pound bag is perfect for the complete recipe. Uncle David suggests boiling the potatoes with the skin on, and then peeling. I concur.
