  1. Cover potatoes with water in a 4-1uart sauce pot; bring to a boil over medium-high heat. Reduce heat to low and simmer 10 minutes or until potatoes are fork-tender. Drain and cool slightly. Mix mayo, vinegar, sugar, salt, and pepper.
  2. Gently toss potatoes, mayonnaise mixture, celery, onion, and eggs. Serve chilled or at room temperature.
  3. NotesUse half a recipe for the 2 lbs of potatoes. A 5 pound bag is perfect for the complete recipe. Uncle David suggests boiling the potatoes with the skin on, and then peeling. I concur.
