Carrot Cake with Cream Cheese Frosting
Blane's Favorite Birthday Cake
Ingredients
- CAKE:
- 2 c flour
- 2 c sugar
- 2 t baking soda
- 1 t salt
- 3 t cinnamon
- 4 eggs
- 1 c corn oil
- 4 c finely grated carrots
- FROSTING:
- 8 oz soft cream cheese
- 4 T butter
- 2 c powdered sugar
- 1/2 t lemon extract
- 1 t vanilla
- 2 c. chopped pecans as garnish
Instructions
- Grease and flour 3x 8" cake pans.
- Mix flour, sugar, baking soda, salt, and cinnamon. Set aside. In mixer beat eggs until frothy. Beat in oil. Add dry mix to the wet.
Blend in carrots. Pour batter into pans. Bake at 350 Degrees for 30 minutes or till toothpick comes out clean. Let cool in pan
for 15 minutes before inverting onto rack. Once cooled apply frosting between layers as well as cake top and sides. Sprinkle with pecans for decorations.
Notes: There are about 4 cups of grated carrots in a 1lb bag of whole carrots
