Two Favorite Chicken Salad Recipes from Aunt Kris
My Mom’s Standard Chicken Salad
- 2 cups or more cooked chopped chicken (great for rotisserie chicken)
- 1 jar olives with pimentos, drained and chopped, about a cup
- About 1 ½ cups celery, cut in small slices
- Mayonnaise to taste (1/2 cup or so)
- (Optional) Italian parsley chopped ½ cup
Stir all together and serve on sandwiches or as a salad on lettuce. (It’s even better the second day!)
Curry Chicken Salad
- 2 cups or more cooked chopped chicken
- 1 to 1 ½ cups red grapes, halved
- Chopped Italian parsley, about ½ cup
- 1 to 1 ½ cups celery, cut in small slices
- Curry powder to taste (at least a tablespoon, depends on how spicy you like curries)
- Salt and pepper to taste
- Mayonnaise to taste (1/2 cup or more)
- Chopped cashews for garnish
Stir all ingredients together. When serving, garnish with chopped or whole cashews.
